Red Velvet Truffles

Need a delicious sweet treat?! I first had these at my brother and sister-in-law's wedding reception, and they were so good. My sweet sister-in-law received countless texts from me their first few years of marriage asking her how to make these, and they have become one of my favorite things to make. They are easy, only use a few ingredients, and they are a crowd pleaser! 

1 box red velvet cake mix 
1 container cream cheese frosting
24 oz. Almond Bark (or white chocolate)
Sprinkles (optional)
**ingredients on the cake mix box to make the cake

Make the red velvet cake according to the box instructions and then let it cool. After cake is completely cooled, crumble it into a mixing bowl and mix in cream cheese frosting. Put mixture in the freezer or refirgerator to chill (it makes it easier to roll into balls). When mixture is chilled to your desire, roll into 1" balls and place on a cookie sheet (I then put them back into the freezer to harden so that they are easier to dip). Melt almond bark (or white chocolate) and dip cake balls. Place on a baking sheet (or flat surface) lined with parchment paper and add sprinkles immediately (before almond bark hardens).  I like to throw the truffles back into the freezer (after they are dipped) so they can harden quicker. 

A few tips:
Melt part of the almond bark or white chocolate at a time so it doesn't harden before you are done dipping all the cake balls. 
These can be made ahead and frozen.

**This makes about 30 truffles
